January Harvesting Guide
- The key to having vegetables available in January is to choose hardy varieties, and to plant them at the right time of year
- Sprouts, leeks, kale, and perpetual spinach are all in season, whilst celeriac, parsnips, swedes, and salsify can be left where they grew and brought home as required
- Keep stored beetroot, carrots, potatoes, and squash under observation, and discard any that begin to soften or sprout
- Pears do not keep as well as apples, and may not store well for much longer
